- Keep raw meat, poultry and fish away from ready-to-eat food: separate boards, utensils and storage, raw food on the lowest shelves.
- Cook to the right internal temperature and check with a clean thermometer.
- Keep cold food cold (41°F / 5°C or below) and hot food hot (135°F / 57°C or above). Between those temperatures, bacteria grow fast.
- Tell your manager if you have vomiting, diarrhoea, jaundice or a sore throat with fever. Do not work with food while sick.
Step by step
- Arrive fit for work: clean uniform, hair restrained, no jewellery on hands and wrists.
- Wash hands before starting, after raw food, after the toilet, and after touching your face, phone or rubbish.
- Use colour-coded boards and knives for raw and ready-to-eat food.
- Store food covered, labelled and dated, with raw food below ready-to-eat food.
- Cook and check the core temperature with a clean probe thermometer. Record it.
- Cool hot food quickly in shallow containers before it goes in the fridge.
- Clean and sanitize surfaces and equipment after each task.
Never
- Never touch ready-to-eat food with bare hands where gloves or utensils are required.
- Never thaw food on the counter at room temperature.
- Never work with food when you have vomiting or diarrhoea.

- Everyone who handles food: cooks, kitchen porters, servers, bartenders, banquet and room-service staff.
- Managers and supervisors, who check temperatures, cleaning and staff health.
- Housekeeping and stewarding staff who handle clean dishes and utensils.
What the rule says
In the US, food safety rules are set by states and local health departments, most of which base their codes on the FDA Food Code. Food businesses with a hazard analysis plan (HACCP) must follow and record it.
The Food Code sets handwashing (at least 20 seconds), cold holding at 41°F (5°C) or below, hot holding at 135°F (57°C) or above, cooking temperatures by food type, and cooling limits.
Food employees must report certain symptoms and illnesses to the person in charge, and may be excluded or restricted from work. Other countries have similar rules — for example FSSAI in India and food hygiene regulations in the UK and the Gulf.
Common mistakes
- Using the same board or knife for raw chicken and salad.
- Tasting with the stirring spoon.
- Cooling a large pot of food on the counter.
- Wiping hands on aprons or cloths.
- Coming to work sick because the kitchen is short-staffed.

What is the temperature danger zone?
